Pilate did not believe in the divinity of Jesus. By your interpretation of "who is a liar" Pilate should be incapable of speaking the truth about anything. And yet Jesus agrees with Pilate's assessment.

Jesus agreed with Pilate, Pilate was speaking the truth. Ergo, your interpretation is wrong.
