They used the chant they were familiar with, which sounded more like this מקהלת הלוויים | "שלום עליכם" | Leviim Choir | "Shalom Aleichem" | TETA Prod.
And, as they spread throughout the Roman empire and more Romans began to enter the Church, in both the eastern Roman province, which would later become Byzantium, began to develope like this Psalm 135—Byzantine Chant (Intro Theme) and in the West- Roman empire began to sound like this Old Roman chant - Qui habitat in adiutorio altissimi (Part I) both forms developing from the Hebrew chant. We are talking about the roots but the branches that develop from it do begin to become richer and distinct forms.

Didn't Latin Gregorian chant evolve from Greek, not Hebrew? I watched/listened to some 5th and 6th century early Roman Chants on Youtube, and they sounded almost exactly like that which was common around the same time in Byzantium. and the Greek Orthodox world (of even today). Same melodies etc. Sounded nothing like Hebrew.
