Myself as a Bavarian/Austrian some kind of "balkanic German" i can agree, that we SE-Europeans are probably not less religious than others, but more focussed on emotionality than intellectuality, e.g.: On the SurFace Austria was nearly entirely protestantized in the XVIth by real Germans - yet, the Habsburger easily extincted it as it was too much abstract theology. When Austria began its "reconquista" ~1700 it was mostly supported by muslimic (!) Albanians, because they were at that time at odds with Istanbul.

In the case of Muslim apostates who convert to other faiths, both the Quran and the Hadiths are consistent in their condemnation. That's why they're getting persecuted and, if the opportunity presents itself, Muslims will kill them for it.
